What Is It:  Member of the Grass Family

Also Known As: Pearly Barley, Pot Barley, Scotch Barley, Hato Mugi (specialized processing)

Staple Now: Russia, Canada, Ukraine and Turkey, Saudi Arabia, US

Major Producers: Russia, France, Germany. In the US, North Dakota, Idaho, Montana, Washington, Colorado, Wyoming, Virginia, Minnesota, Maryland, South Dakota, Oregon and Utah.

Flavor Profile: Nutty, slightly bland.  Absorbs other flavors well.

Texture: Chewy

Nutrtion Highlights: Fiber, Niacin, Selenium, Iron and Copper. Contains gluten.

Common Dishes: Excellent in soups and stews. A key ingredient in beer.
